Vegan Broccoli Soup

Hello dear readers,

Last week my father and sister fell ill with a simple February cold and as you can probably guess I am now sick as well. I don’t do well with being sick I push myself to do thing which only makes it worse and more long lasting. Because I am so tired easy healthy and warm foods are on the menu for dinner.

Soup has always been a favourite food of mine when I am sick; it’s all I want to eat. Unfortunately I found my self is an all to familiar situation for my likening. The fridge was devoid of all the normal ingredients to make soup. I felt bereft to say the least, all I had was some old broccoli witch wasn’t looking to good and a few stalks of celery. That’s not really a lot to work with but I quickly came up with a strategy of how I was going to make these ingredients taste amazing.

This is what I have come up with so I hope you enjoy this recipe for Vegan Broccoli Soup

Vegan Broccoli Soup

Ingredients:

3 stalks celery

1 ½ large heads of broccoli

2 Tbs olive oil

3 Tbs onion

2 Tbs garlic

¾ tsp salt

1 ½  tsp honey

1 Tbs lemon juice (if you don’t want a strong citrus flavour then add less)

¼  tsp pepper

1/8 tsp sage

¼ tsp coriander ,basil, thyme and marjoram

2 cups water

Directions:

Cop celery and broccoli into small similar sized pieces.

Heat oil in a pan and add chopped vegetables

Cook vegetables for 10 min then add chopped onion and garlic

Cook for another 10 min then add lemon juice and honey

Continue to cook until vegetables are tender

Remove from heat and add the salt, pepper, and herbs

Once cooled puree in a blender with water (This yields a think soup)

If you like a thinner soup add more water if you like a thicker soup add less

Bring to a light bubbling boil in a pot then serve.

(Be careful when boiling thick soups because you can easily burn yourself.  To avoid harm once the soup is warm stir constantly until the soup is bubbling or alternatively if you don’t have the leeway of standing there for a long time place a lid or oil screen over the pot and stir occasionally)

Grain-Free, Dairy-Free, Breakfast Cereal

Hello Readers

This is my very first post for the allergy survival guide.  When you have allergy’s often the meal that throws you for a curve ball the most is BREAKFAST.   Breakfast can be hard if you can’t eat eggs or grains. I personally can eat eggs but sometimes I just feel like good old fashioned cereal or porridge.

This cereal recipe can be served cold or hot to make a refreshing cereal or a warming porridge.

This cereal is super good for you to!

Grain free,  Dairy free, Warm or Cold Cereal bowl.

Ingredients:

 

2 tbs Black Chia

2 tbs Hemp Hearts

1 tbs Chopped Pecans

1 tbs Currents

1 tsp water

½ cup Milk sub of your choice (I use lactose free or almond milk but they all work)

Instructions:

Combined all the dry ingredients in a bowl.

Add water and mix well

Slowly add the milk sub little by little. Only add as much milk sub as you would like just remember that the chia will gel so account for some loss of moister especially if you are eating it hot.

For hot porridge just stick it in the microwave for 25 seconds stir then put on for another 15 seconds. You can also warm it on the stove if you are making a bigger batch.
